The oatmeal smore cookie recipe is one of my favorites. It has all the flavors of a smore, but in a smaller, more subtle portion. Ingredients 1/2 cup salted butter, softened 1/2 cup shortening 1 cup packed brown sugar 1/2 cup granulated sugar 2 large eggs 1 1/2 teaspoons vanilla extract 2 1/4 cups all-purpose flour 1 teaspoon baking soda 1/4 teaspoon salt 1 cup old-fashion oats 1 cup (6 ounces) semi-sweet chocolate chips 1 cup miniature marshmallows Hardware Whisk Large bowl Medium bowl Cookie sheets Mixer Step 1: Preheat oven to 350 degrees F. Step 2: Lightly grease cookie sheets; set aside. Step 3: In a medium bowl, whisk together flour, baking soda, and salt; set aside. Step 4: In a large bowl, cream together butter, shortening and sugars.
Step 5: Add eggs one at a time, beating well after each addition. Step 7: Beat in vanilla extract. Step 8: Gradually add flour mixture and mix well. Step 9: Stir in oats, chocolate chips, and marshmallows. Step 10: Form dough into teaspoon size balls, pace on prepared cookie sheets 2 inches apart.
Step 11: Bake 11-13 minutes or until golden brown. Let cookies set for 2 minutes, then transfer to cooling surface. Makes 48 cookies.
